 Love the crazy scribbled sheep on the label. Pecorino is the variety and has nothing to do with cheese. Sweet, ripe, spicy, southern, herbal nose. This is from Abruzzo, so you’d expect it to be low on acidity. This takes the low acidity quite far. It’s ripe and rather like apricots with basil.  Now, there’s an idea.
