						 100% Chardonnay planted on clay-chalk soils and gravel top soils. Vines are 25 years old, Guyot or Cordon de Royat pruned and planted
 at a high density of 10,000vines/ha. Grapes were hand-harvested in late-Sept at 60hl/ha and sorted at the winery. A cold must-settling
 was carried out for 24 hours, then the juice was racked and fermented, initially in tanks and later in oak barrels with selected yeasts at
 19°C. Matured on lees with frequent stirring for 12 months in French oak barrels, of which 30% were new. Winemaker Bertrand Straebler.

 Lovely rich nose. Sweet fruit.  It’s good but I wouldn’t be buying it for this Christmas.  Get it under the stairs for a couple or three years and it’ll have become wonderful.
