The grapes are de-stemmed and crushed and the must sent for settling and clarification. The wines then undergo classic temperature controlled fermentation with selected yeasts. The pump over is managed to give maximum extraction of fruit and a part is also cold macerated prior to fermentation to enhance aromas and fruit characters.

Cracking smell for £2.98. Spicy and interesting. Fresh acidity and spicy, interesting taste. Really a brilliant buy.
